Carrot & honey cake
Make cakes not war.
1tsp baking powder
1 1/2tsp bicarbonate of soda
1/2 cup sesame seeds
1 cup walnuts, chopped
3 cups peeled and thinly grated carrots
1 1/2 cups oil
2/3 cups honey
Mix the dry ingredients, the sesame seeds and the walnuts together in a big bowl.
Add the carrots and the rest of the wet ingredients and mix well.
Grease a round 26cm spring form and pour the cake mixture into it.
Bake for 45-50 minutes. Stick a toothpick in the middle of the cake and if it comes out dry then the cake is ready.
*For decorating the cake I used a nice product I found here in the health food shop - an agave "icing sugar". If you can find it and want to decorate your cake with it, make sure you do it when the cake has completely cooled and right before you serve it because this powder crystallizes and disappears.
You can cut whatever pattern you like on paper (I found this one on the internet), lay it on the cake and powder.
