Melon jelly with berries (GF, vegan)
For 5 months Ben has made me his mother.
He smiles, looks, cries and shouts at me. I am the center of his world. That's so weird to say.
Sometimes I look at my life and I don't know how it all happened. I mean, I know how it happened, I was there, but when did I become such an adult? I still feel like a kid myself a lot of the time, I still feel like I need MY mommy. And now I am someone's mommy and I am someone's mommy for 4.5 years, but I still didn't get used to it.
And it's going to be gone in a heartbeat and these two boys are going to rebel and ignore me at times, because that's what teenagers do and that's ok, but I am going to be sorry that I didn't acknowledged more that I was, that I am, their center.
So here, I am acknowledging.
4tsp agar-agar powder
berries (but you can use any fruit you like)
*you can basically use any fruit you like, blend it and use the same amount of agar-agar, it's going to thicken.
Put the liquid in a sauce pan together with 4tsp agar agar. Mix well and bring to the boil.
Cook for 4-5 minutes and remove from heat.
In the bottom of your serving dish or glasses put berries or whatever fruit you like and pour the melon liquid on top.
Leave in the fridge to settle.
