Chocolate & poppy seed cake (GF)
I rest my case.
160g 50% dark chocolate (I used "Vivani" because they use coconut sugar as a sweetener)
6 eggs, separated
160g ground poppy seeds
Grease a square baking tray approx. 27x18cm big.
Put the milk, butter and chocolate in a pot and melt over a low heat. Stir frequently so that the chocolate doesn't burn on the bottom.
Leave aside to cool a bit.
Beat the egg whites using a mixer or a hand mixer and gradually add the 100g honey. If the honey stays on the sides of the bowl stop the mixer and push the honey to the whites with a spatula.
Beat them till the foam is thick and stable (when you turn the bowl upside down the foam stays in it).
In another bowl beat the egg yolks with 50g honey using a mixer or a hand mixer. Beat till the yolks are fluffy.
Add 3tbsp of the chocolate to the egg yolks and mix. Fold gradually the poppy seeds and melted chocolate into the egg yolks.
Fold gently the egg yolks mixture with the egg whites till the mixture is smooth.
Pour the mixture onto the greased tray and bake for 35 minutes. If the top of the cake gets too dark you can put a baking tray in the oven-shelf on top of it.
Cool and cut into squares.
