Apple cinnamon cake
It's not that the cake doesn't taste good at the end, it's actually very nice, but is it because the sugar kick is missing?
In any case, this "withdrawal" just proves my point and I am determined to clean my body from bad sugar. Bring it on!
Don't expect the cake to be fluffy, it's quite condensed, but not in a bad way.
3/4 cup maple syrup + 3tbsp for the topping
vanilla pod, desseded
4 1/2tsp baking powder
4 apples, cored and peeled
cinnamon, for sprinkling on top
Grease a 26/28cm spring form.
Mix the maple syrup, eggs, cinnamon and vanilla.
Using a mixer combine the flour and butter till the mixture resembles sand (don't let it go beyond that point or it forms into a dough and the egg mixture will not mix into it).
Combine the egg mixture and the flour.
Chop one of the apples into cubes and mix into the batter. Pour into the prepared cake tin.
Cut the rest of the apples into wedges or fan shaped. Arrange them on top of the cake and push them slightly into the dough. The apples shrink during baking so make sure you arrange them crowded.
Sprinkle cinnamon and drizzle the 3tbsp of maple syrup on top/
Bake for about 1 hour.
