Date & pistachio sausage (GF, vegan)
Having my sister and my little niece here was on one side fun and great but on the other side painful.
My sister is a special person to me, we are very close and I am very lucky to have her.
But it makes me angry that life turned out the way that we live so far away from each other. It makes my angrier now when I have children, because I constantly have the feeling that our children are suppose to grow up together and we should mother them living close to each other.
I feel like there is injustice here. I got to meet a great man but it wasn't right for us to live in Israel (for either of us) and because we moved so far away my life is only half full.
Yes, I have him and I have the family that we build, which fills my heart with love and happiness, but one of the people who is most important to me lives so far away.
I want to have everything! I want to live here, with him, but I want my sister by my side as well.
And it doesn't help that she is such a great aunt to my children. Damn her :)
40g coconut oil
pinch of salt
zest of 1 lemon
60g pistachios, after shelling
Mix the pistachios in with your hands, like kneading a dough.
Spread coconut on a big cutting board or your kitchen surface and roll the paste into a sausage on the coconut. Try to bring it together to create an even snake. Wrap with cling film and roll again to give the sausage a nice round shape.
When you want to serve it slice the sausage into coins, as thick as you want them and serve after 2-3 minutes of thawing.
