Strawberry cheesecake blintzes
I am not the easiest person to entertain, but this little guy is a real funny one. Sometimes he even knows he is funny.
These might not look so funny to you but imagine that a 4 year old tells this to you, out of the blue:
We are walking back from kindergarten and we see a man with an amputated hand. I take the opportunity to talk to Alon how people are different and it's ok to look, but not to stare and that he is just a normal person like anyone else.
Alon: ima (mom in Hebrew), but what did they do with his hand?
Me: what do you mean?
Alon: did they throw it in the rubbish bin?
Again we are coming back from kindergarten and someone stuck a rose in the neighbor's postbox.
Alon: look, ima, someone thought the postbox is the compost!
Alon is participating in a musical in kindergarten.
About 2 hours after coming back from kindergarten I ask him:
Me: Alon, can you sing me one of the songs from the musical?
Alon: ima, you should ask me straight when you pick me up from the rehearsal, then I remember it. Now I don't know it anymore.
We are sitting and eating together and talking about space and astronauts (something Alon is interested in).
Me (like a good mother): Alon, you know that you can also be an astronaut one day, when you are older. You can be anything you like.
Alon: yes!!! but I don't have the clothes.
Me: don't worry, they will give it to you.
Other half: but you know, Alon, you gotta learn a lot in school.
Me: yeah, you have to have good grades and work hard in school.
Alon: ok, I don't want to be an astronaut anymore.
Definitely my son.
3tbsp maple syrup
50g butter, melted + a bit more for frying
For the filling:
300g cream cheese
150g sour cream
6tbsp maply syrup
zest of 1/2 a lemon
cinnamon, for decorating
Add the butter and mix.
cover the bowl with cling film and leave for an hour.
Warm a bit of butter in a frying pan and pour 3/4 of a ladle onto it. Shake the pan so that the batter covers the bottom of it. Fry a bit till the batter dries on the top and the bottom is a bit brown. Turn the blintzes over and fry on the other side till slightly brown.
Keep on frying the blintzes till you used up all your batter.
To make the filling mix the cream cheese, sour cream, maple syrup and lemon zest.
Clean the strawberries and cut each one to quarters.
Fold the strawberries into the cream cheese mixture.
Lay each blintzes on a cutting board or a clean plate.
On the bottom, leave a space of about 2cm, then put about 3tbsp of the cream cheese mixture in a line from the right side to the left side, leaving about 2cm gap on the sides.
Fold the sides inside (they would cover partly the filling), then the bottom up on top of the filling and roll all the way to the top.
Sprinkle cinnamon on top if you like.
