Butternut squash muffins
*gaining weight and blaming it on the baby (but you know you ate too much)
*sleeping half the day and blaming it on the baby (even though you are always sleepy)
*craving chocolate and blaming it on the baby (even though you always crave chocolate even when you're not pregnant)
*having no patience and blaming it on the hormones (even though you never have patience)
*hating everybody and blaming it on the hormones (even though you always hate everybody)
*not cleaning and blaming it on barely being able to move (even though you always look for excuses not to clean)
*spending too much money and blaming it on having mommy brain (even though you knew exactly what you're doing!)
There has to be good in everything, right?
2tsp baking powder
1tsp bicarbonate of soda
110g coconut sugar
50g butter, melted and cooled
225g butternut squash, peeled and grated (without the seeds, of course)
In a big bowl mix the flour, baking powder, soda, cinnamon, salt and coconut sugar.
Make a well in the center and add the eggs, milk and butter. Mix well.
Add the grated butternut squash and mix.
Spoon the mixture into the muffin cases up to the top.
Bake for 20 minutes.
Cool on a wire rack.
