The easiest strawberry mousse ever (GF)
I love the seasons in Germany, it's the perfect place as far as I am concerned to feel all four seasons properly.
This year summer came early (this time last year we were still heating our flat...) and I just love it.
The windows are wide open, short sleeves, watermelon, my little boy smelling like a mixture of ice cream and sun cream. I can't ask for more.
vanilla pod, deseeded
50g agave syrup
The next day open them and scrape just the fat part out into a bowl. You don't want to put any of the liquid into it.
In a blender mash together 4 strawberries, vanilla and agave syrup.
Whip the coconut milk, either by hand or using a mixer, till it resembles thick whipped cream. Gently fold the strawberries liquid into it.
Share into bowls, chop the rest of the strawberries and decorate the top of the mousse.
