Coconut drop cookies (GF)
This is natural, right?
Most of us have nice memories from holidays, presents, food, songs, traditions.
I miss a lot of that.
I don't miss Israel as much as I miss my family, but oh boy, how I miss the food.
Holidays are all about family and food, at least for me, so it's a really difficult time.
I think my family will be offended reading this post, how dare I comparing them to food?
It's not a competition, they are both things I miss equally.
Ok, now I'm really in trouble.
If you are not me, and you are not, you don't know how much food moves me. Food is full of memories, good and bad, sad, happy, it's full of emotion.
Happy late Passover. Next year in Jerusalem.
p.s: God, any chance of canceling Easter next year? Make some room for Passover?
So sick of eggs, coloring eggs, eating them, hunting them, chocolating them. It's just a darn egg.
p.s2: Dear god, sorry I said darn.
In a big bowl mix the coconut, cornflour, zest and vanilla seeds.
Beat the egg whites with a pinch of salt. If you have a mixer it's the easiest way, but hand mixer or an old fashioned hand would work as well.
When the foam starts to build up drizzle the maple syrup into it and continue beating till the meringue is thick and quite shiny. Add a whole egg and beat for a few more seconds.
Gently fold the meringue into the coconut mixture, until well mixed.
Lay a baking paper on a big tray and using 2 tablespoons drop the mixture on the tray. If you need to use 2 trays then you can either put your oven on fan or rotate the trays in the oven every few minutes.
Bake until they are golden and their bottom is brown, but not burned.
I used only one cookie to check the bottom because when they are hot they separate from their bottom and I only wanted to "destroy" one cookie.
My biscuits were almost 50 minutes in the oven, but you can have them in there for shorter if you don't want them that brown.
After taking them out of the oven leave them to completely cool on the trays, 'cause like I said they need to be cool in order for them to come off the paper with their bottom intact.
That just sounded wrong... you know what I mean.

vanilla pod, dessded
3 egg whites
pinch of salt
140ml maple syrup
